vegan chocolate cake


Ingredients

  • 1/2 cups unbleached white flour
  • 1/3 cups unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1 cup cold water
  • 2 tsp pure vanilla extract
  • 2 tbs cider/rice/white vinegar
Directions
  1. Preheat oven to 375'F. Line a 9-inch round or 8 inch square cake pan with parchment or grease well
  2. sift together the flour, cocoa, soda, salt, and sugar directly into the cake-pan or bowl.
  3. in the measuring cup, measure and mix together the oil, cold water, and vanilla.
  4. pour the liquid ingredients into a bowl and mix the batter with a fork or a small whick. when the batter is smooth, add the vinegar and stir quickly.
  5. there will be pale swirls in the batter as the baking soda and vinegar react. Stir just until vinegar is evenly distributed throughout the batter. Pour into pan.
  6. bake for 25 to 30 minutes and set aside to cool.
