vegan chocolate cake
Ingredients
- 1/2 cups unbleached white flour
- 1/3 cups unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 cup cold water
- 2 tsp pure vanilla extract
- 2 tbs cider/rice/white vinegar
Directions
- Preheat oven to 375'F. Line a 9-inch round or 8 inch square cake pan with parchment or grease well
- sift together the flour, cocoa, soda, salt, and sugar directly into the cake-pan or bowl.
- in the measuring cup, measure and mix together the oil, cold water, and vanilla.
- pour the liquid ingredients into a bowl and mix the batter with a fork or a small whick. when the batter is smooth, add the vinegar and stir quickly.
- there will be pale swirls in the batter as the baking soda and vinegar react. Stir just until vinegar is evenly distributed throughout the batter. Pour into pan.
- bake for 25 to 30 minutes and set aside to cool.
