Marinated eggplant with vermicelli


Ingredients

1 tbs vegetable oil
7 cups eggplant
3 tbs lime juice
3 tbs soy sauce
2½ brown sugar
3 cloves/ 1 tbs minced garlic
6 oz vermicelli
spinach
shredded carrot
crushed roasted peanuts

Instructions

1. Heat oil over medium-high heat, add eggplant, sautee until soft.
2. Meanwhile, whisk together lime juice, soy sauce, brown sugar, and garlic until sugar dissolve. STir into eggplant, cover, and reduce heat to low.
3. Cook vermicelli based on package instruction (or just boil it in water until soft), drain.
4. Put spinach on plate, top with carrot, vermicelli, and eggplant. garnish with crushed peanut.
