General Tso's tofu wrap with avocado slaw and cashew



I mixed some recipe that I tried before and create them to a new creation. I am so happy about how it comes up. It's very easy and yummy!


INGREDIENTS

1 block of tofu cut into fingers
5 tortilla wraps
Roasted salted cashew

For Avocado Slaw
1 cup of carrot
1 cup of red cabbage
Half avocado
One lemon, take the juice
Salt
Black pepper

For General Tso's Sauce
2 tablespoons white wine (rice wine will be better, but I substitute it with white wine)
2 tablespoons rice vinegar/ mirin
3 tablespoons soy sauce
3 tablespoons mushroom/ vegetable stock
4 tablespoons sugar
1 teaspoon sesame oil
1 tablespoon flour (the original recipe asked for corn starch, but we don't have)
2 teaspoons oil
2 teaspoons garlic, minced
2 teaspoons ginger, grated
2 teaspoons scallion
Chillies (as you wish, it depends on how spicy the chilies species is, but the sauce is not designed to be spicy)


INSTRUCTION

For the Slaw
make slaw by adding all ingredients except vegetables (avocado through salt + pepper) to a small mixing bowl and whisk to combine. Then add veggies and toss to coat. Set in the refrigerator until serving.

For the General Tso's Sauce
  1. Combine soy sauce, wine, vinegar, chicken stock, sugar, sesame seed oil, and cornstarch in a small bowl and stir with a fork until cornstarch is dissolved and no lumps remain. Set aside.
  2. Combine oil, garlic, ginger, minced scallions, and red chilies in a large skillet and place over medium heat. Cook, stirring, until vegetables are aromatic and soft, but not browned, about 3 minutes. Stir sauce mixture and add to skillet, making sure to scrape out and sugar or starch that has sunk to the bottom. Cook, stirring, until sauce boils and thickens, about 1 minute. Add scallion segments. Transfer sauce to a bowl to stop cooking
  3. Mixed the tofu with the sauce. I didn't use all the sauce because I don't want the tofu to taste strong. The left over of the sauce will be good to keep in the jar and refrigerated.

To Serve
Fill the warm wrap with slaw, tofu, cashew, and, if you wish, cheese. Enjoy it!
