easy Indonesian clear spinach soup
Local Southeast Asian spinach is different than the American spinach. The structure is a bit fibery and it doesn't cook down as much as the other spinach. Also, the local shallot is a bit different. It is smaller but has more intense and strong flavour.
Spinach soup with a deep fried turmeric tempe and white rice is always the set my comfort food!
Ingredients
1 bunch of spinach
2 cups of water
1 corn
2-3 shallots, thin sliced
4-5 garlic, thin sliced
1/2 tablespoon vegetable oil
salt
Instruction
- wash the spinach and cut the leaves and the soft part of the stalk. Remove the roots and half of the stalk.
- Remove the kernels from the ear of the corn.
- heat the oil in a pan, toss garlic and shallots until fragrant. Add water, corn, and spinach. Cook until water is boiling.
- Enjoy!
