Tofu Zoodle




Zoodle as in Zucchini Noodle. The original recipe is using chicken instead of tofu. It also has beansprout as part of the meal. I made it twice, with and without bean sprout, it's really not a big deal. If you want to use bean sprout, just spread it on top of zucchini after blanching.

Ingredients
2 medium zucchini (or 3 small), spiralized
1 block of extra firm tofu

Sauce for the tofu
4 cloves of garlic, minced
2 segments of fresh ginger, minced
zest of 1 lime
1/2 teaspoon of white paper
3 tablespoon of sweet soy sauce
2 tablespoon of soy sauce
1 tablespoon of butter (or margarine of vegan option)

Sauce for the noodle
1/2 teaspoon sweet soy sauce
1/2 teaspoon soy sauce
1/4 teaspoon sesame oil

Instructions
1. Heat a pan with butter (or margarine)
2. Stir fry garlic, ginger, lime zest until smelled
3. Toss tofu. Stir frequently until tofu is brown.
4. add white paper, sweet soy sauce, and soy sauce. Stir frequently.
5. Remove and set aside.
6. Blanching the zucchini (and beansprout if you use any)
7. Mixed 1/2 teaspoon sweet soy sauce, 1/2 teaspoon soy sauce, and 1/4 teaspoon sesame oil in a bowl, and toss the zucchini.
8. Serve tofu on top of the zucchini.
9. You can also add sesame seed on top of the tofu.
