General tso's tofu burger with avocado-slaw



INGREDIENTS
1/2 blocks of extra firm tofu
General Tso's sauce

AVOCADO SLAW
2 cups shredded cabbage + carrots
1/2 ripe avocado
1 Tbsp maple syrup (or sweetener of choice)
1 lime, juiced
Salt + Pepper to taste

FOR SERVING
2  buns

INSTRUCTION
  1. Press tofu with a towel to take the water out, then shred.
  2. Mix together general tso's sauce and tofu in a skillet. Stir fry with a small fire. The amount of general tso's sauce depends on how thick you want the sauce to be.
  3. In the meantime, make slaw by adding all ingredients except vegetables (avocado through salt + pepper) to a small mixing bowl and whisk to combine. Thin with water until a thick sauce is made, then add veggies and toss to coat. Set in the refrigerator until serving.
  4. Stir the tofu once a while to make sure it cooked thoroughly.
  5. Place generous portions of slaw on the bottom buns, top with a generous serving of tofu. Serve with, lettuce, tomato, and extra hot sauce if you wish!
